I think my favourite is this little gem from Rush, featuring Niki Lauda, his soon-to-be wife, a couple of Tifosi, and a Lancia 2000.

I love that scene in Rush!
One of my favorites is the car chase with the Mini in Bourne Identity. Its nostalgic for other great movies like Italian Job, but also gritty and exciting.
This is probably one of the all time great car scenes (regardless of what kind of car it was):

The opening scene from LeMans, were McQueen drives his 911 through town to the track and stops and stares at the section of new guardrail from his crash the previous year. It's maybe five minutes with no dialogue and it's brilliant.

I liked the car chase in Mr & Mrs Smith between the 3 M3s and the Dodge Caravan mostly because of how well-used the van was as a prop.
